Skillet Stewed Tomatoes
and Cod
Ingredients:
-Approx. 1 lb. Cod fillets
-1, 14 oz. can of stewed tomatoes
-1 medium yellow onion, chopped
-2 cloves garlic
Directions:
Spray large
skillet with non-stick spray. Place onion, stewed tomatoes, garlic and fresh
cod fillets in skillet over medium heat with the lid on. Simmer on medium heat
for about 10-15 minutes or until Cod is cooked (or easily flakes apart). Stir
occasionally. Serve with a side of steamed vegetables and if your plan allows,
1/3 cup Quinoa.
