Our latest creation is a veggie-packed, carb-free pizza crust! Don't fret! It doesn't take Rachel Ray to make this morsel of Italian delight. In addition to the ingredients, all you'll need is a pizza pan, steamer and parchment paper. A spatula wouldn't hurt either.
Ingredients:
- 1 head of cauliflower (mine was almost 4 lbs.)
- 3 eggs
- 1 cup of mozzarella cheese
- 1/4 cup parsley
- 1/4 cup basil
- a dash of salt
- 1 tbsp. minced garlic
Pre-heat oven to 450 degrees. Finely chop and steam cauliflower for 15-20 minutes. When finished, drain and mix cauliflower with eggs, mozzarella, parsley, basil, salt and garlic. Mix well and form onto parchment paper on top of pizza pan. Push thicker portions out towards the edge of pan to make a crust. When molded into pie form, place pizza crust into oven for 15-20 minutes. Once evenly browned, take out and set to cool. Turn oven off.
Put marinara or pizza sauce on cooled crust. Top with cheese, lean protein and vegetables. Place under broiler (low) and watch toppings cook (4-5 minutes). Remove pizza from oven, let cool for 5 more minutes. Enjoy!
