Buffalo and Parmesan cauliflower. Because low-carb diets don't have to be boring!

Welcome 2015 with a kick! There's no reason to eat a low-carb diet in misery. Our resolution is to keep our patients at Access Medical in Denver, CO interested in healthier diet and lifestyle options.

You'll need:

Denver Weight Loss Clinic
  • 1 head (about 1-2 lb.) of chopped cauliflower
  • 1/2 cup mild-hot buffalo sauce
  • 3 tbsp. olive oil
  • 1/3 cup shredded Parmesan cheese

How to:

Preheat oven to 425 degrees. Chop the head of cauliflower into bite sizes. In a large bowl, mix all other ingredients. Mix in cauliflower making sure that pieces of cauliflower are well coated in sauce. Place on a cookie dish when oven is preheated. Bake for 30-40 minutes watching closely to flip cauliflower after about 20 minutes. Once roasted, remove from oven, let cool. Serve with a yogurt based ranch dressing. Enjoy!
